Healthy Olive Oil Brownies
Rich, chocolatey, fudgy, brownies are the perfect dessert. Brownies are a timeless treat that will make your mouth water just with the smell of the melted chocolate and crackly top. Although delicious brownies are typically loaded with calories, fats, and added sugar, this recipe is a healthy version without compromising taste or texture!
Ingredients:
4 1/3 cup chocolate chopped (dark or semi sweet)
1/4 cup Templeton Olive Oil
3 eggs, room temperature
1 cup coconut sugar
1 cup almond flour
1/4 cup cocoa powder
Pinch of salt
Additional 1/4 cup chocolate chips (optional)
Instructions:
Pre-heat the oven to 355 F and line an 8x8 inch baking pan with baking paper.
In a pot or pan add the olive oil and chocolate on medium heat and stir until chocolate is melted.
In a separate bowl using a stand mixer with a whisk attachment, beat the eggs and the coconut sugar until fluffy and tripled in volume. This will take about 5-7 minutes.
Slowly add in the melted chocolate and oil and mix until fully incorporated.
Sift in the almond flour, cocoa powder, and salt into the chocolate mixture until smooth. Transfer mixture into baking pan sprinkle on top additional chocolate chips if desired.
Bake for 18-20 minutes or until inserted toothpick comes out clean.
