Bell Pepper Salad with Fig Balsamic Vinaigrette

This colorful and vibrant bell pepper salad is the perfect side dish for any occasion. Loaded with nutrients and flavor, this salad is perfect served as an appetizer or goes well with any pasta dish. This recipe combines the fresh flavor of vegetables with our smooth nutty Extra Virgin Olive Oil, mixed with our tangy Fig Vinegar for the perfect combination.


Ingredients:

Serves 8

  • 1/2 pint cherry tomatoes, halved

  • 1 red bell pepper, diced

  • 1 orange bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1/2 cup crumbled feta cheese

  • 1 teaspoon fresh basil

  • 1/2 teaspoon oregano

  • salt and pepper to taste

  • 1 avocado, diced

  • 3/4 cup cashews

  • 2 tablespoons Templeton Olive Oil

  • 2 tablespoons Templeton Olive Oil Irish Fig Vinegar

Directions:

  1. Mix tomatoes, red bell pepper, orange bell pepper, yellow bell pepper, and feta cheese in a bowl.

  2. Add basil, salt and pepper to bowl and toss.

  3. Add avocado and cashews to vegetable bowl and toss again.\

  4. Drizzle Templeton Olive Oil and Fig Vinegar to bowl evenly coating.

  5. Serve and enjoy!
