This vibrant Strawberry Spinach Salad with Homemade Olive Oil Poppyseed Dressing is the perfect combination of fresh, sweet, and savory flavors. The tender spinach leaves are complemented by juicy, ripe strawberries, finished with refreshing mint leaves that embodies a light and delicious flavor. Ingredients: Serves 6
For the Salad:
3/4 cup raw pecans
1/2 small red onion (thinly sliced)
10 ounces fresh baby spinach
1 pound strawberries cut in quarters
3/4 cup crumbled feta cheese
4-5 fresh mint leaves
For the Dressing:
1/4 cup balsamic vinegar
3 tablespoons Templeton Olive Oil
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustars
1/2 teaspoon salt
1/8 teaspoon ground black pepper
Instructions:
Preheat the oven to 350 degrees Fahrenheit. Spread the pecans in a single layer on a baking pan, toasting for 8 to 10 minutes until toasted. Let cool then transfer to a cutting board and roughly chop.
Place the sliced onions in a bowl of cold water and cover. (This keeps the flavor of the onion while eliminating the harsh onion bite.)
Prepare the dressing: In a small mixing bowl add in the dressing ingredients listed above and whisk until combined.
Assemble the salad: Place the spinach in a large serving bowl. Add the strawberries, drained onions, and half of the dressing and toss until combined. Assess the amound of dressing and add the remaining to desired amount. The spinach leaves should be moistened but not completely drenched in dressing.
Top with the feta, pecans, and mint leaves. Toss lightly to combine.
